The olives are slowly ripened according to centuries-old family recipes in a simple brine of water and sea salt, without lye or other chemical treatments. As a result, they retain their full, fruity, and slightly wine-like flavor.
The extra virgin olive oil is cold-pressed within 12 hours of harvest and comes from the Kalamata (Kalamon) olive. The result is a velvety oil with fresh, slightly spicy and nutty notes and a refined peppery finish – a sign of the high concentration of natural polyphenols.
